(Recipe) Kohlrabi, beet and Apple salad

As the days grow warmer, we naturally gravitate towards lighter, fresher meals. This colourful salad combines crisp kohlrabi, earthy beetroot and sweet apple with fragrant herbs and a bright lemon dressing.

Simple to prepare and full of seasonal goodness, it’s the perfect addition to a relaxed lunch, picnic or summer dinner table.

(Recipe) Kohlrabi, Beet & Apple Salad

Fresh, colourful and full of texture, this salad combines crisp kohlrabi, earthy beetroot and sweet apple with a bright herb dressing and crunchy nuts. Perfect as a light lunch or alongside a summer meal. 🍏🥗✨

Ingredients

  • 1 bunch spring onions
  • 2 kohlrabi (green or purple)
  • 50 g mixed nuts (whatever you have on hand)
  • 1 tbsp lemon juice
  • ½ tsp fine mustard
  • 2 tbsp extra virgin olive oil
  • 1 apple
  • 8 fresh sage leaves
  • A small handful of chives
  • 2 small red beets

Method

  1. In a small bowl, whisk together the lemon juice, mustard and olive oil. Season with salt and pepper to taste.
  2. Finely chop the sage, chives and spring onions and stir them into the dressing.
  3. Wash the kohlrabi, beets and apple. Using a mandoline or a very sharp knife, slice them into very thin rounds.
  4. Toss the sliced vegetables and apple with half of the dressing.
  5. Arrange the salad on a serving platter and drizzle over the remaining dressing.
  6. Finish with the nuts and serve immediately.
