Ingredients

  • 125 g oatmeal
  • 100 g feta
  • 1 egg
  • 2 tomatoes
  • 1/4 cucumber
  • A handful of lettuce
  • A few pickles
  • 4 multigrain rolls
  • Fresh basil
  • 1 avocado (or two small ones)
  • 2 raw beets (about 250 g)

Instructions

  1. Prepare the Beets: Peel the beets and cut them into chunks. Place them in a food processor along with an onion and garlic, and process until finely chopped.
  2. Mix Ingredients: Transfer the beet mixture to a bowl. Add the egg, oatmeal, and a splash of olive oil. Mix thoroughly.
  3. Add Feta and Basil: Crumble the feta and chop the basil. Add these to the beet mixture and stir well. Let the mixture sit in the refrigerator for half an hour to allow the oatmeal to absorb the moisture from the beets.
  4. Form the Burgers: Divide the mixture into four equal portions and shape each into a patty.
  5. Cook the Burgers: Heat some olive oil in a pan over medium heat. Cook the burgers until they are golden brown on both sides.
  6. Prepare Toppings: Slice the avocado in half, remove the pit, and cut into slices. Slice the tomatoes, pickles, and cucumber.
  7. Assemble the Burgers: Cut the rolls in half. Layer the avocado slices, tomato slices, cucumber slices, pickles, and lettuce on the bottom half of each roll. Place the beet burger on top and cover with the other half of the roll.
