(Recipe) Hearty Pumpkin Lasagna for Crisp Autumn Days

As the air turns cooler and the leaves begin to fall, it’s time to embrace the cozy and comforting flavors of autumn. This delicious pumpkin lasagna is the perfect dish to welcome the season. Packed with sweet pumpkin, savory beef, and aromatic herbs, this lasagna is not only a feast for your taste buds but also warms you from the inside out. Enjoy it as a family meal or a dish to impress at your next dinner gathering. Plus, with a gluten-free option, it’s suitable for everyone!

Ingredients

  • 1-2 pumpkins (approx. 2 kg)
  • 250g ground beef
  • 1 pack of lasagna sheets (we recommend the gluten-free variety from Your Organic Nature)
  • 2 large vine tomatoes (or a can of chopped tomatoes)
  • 2 red onions
  • 1 tsp dried thyme
  • 100g aged cheese
  • 2 sprigs of rosemary
  • 2 garlic cloves
  • Salt and pepper to taste

Instructions

  1. Prepare the Pumpkin:
    Halve the pumpkin and remove the seeds and stringy interior. Cut the pumpkin into small cubes.

  2. Cook the Pumpkin:
    Strip the rosemary leaves from the sprigs and roughly chop the garlic and red onion. Add these along with the pumpkin cubes to a pot. Sprinkle in the dried thyme and add just enough water to cover the ingredients. Bring to a boil and cook for about 20 minutes until the pumpkin is tender.

  3. Cook the Beef:
    While the pumpkin is cooking, heat a knob of butter in a frying pan. Add the ground beef and cook until browned and crumbly. Season with salt and pepper. Dice the tomatoes and add them to the beef. Let the mixture simmer for another five minutes. Preheat the oven to 200°C (390°F).

  4. Make the Pumpkin Sauce:
    Drain the cooked pumpkin and use an immersion blender to puree the mixture into a smooth sauce.

  5. Assemble the Lasagna:
    Spread 1/4 of the pumpkin sauce on the bottom of a baking dish. Layer with 1/3 of the lasagna sheets. Add another 1/4 of the pumpkin sauce and half of the beef mixture. Repeat the layers, ending with the last 1/4 of the pumpkin sauce on top.

  6. Finish with Cheese:
    Grate the aged cheese over the top layer of the lasagna. Place the dish in the center of the oven and bake until the cheese is golden brown and bubbling, approximately 30 minutes.

  7. Garnish and Serve:
    Sprinkle some extra chopped rosemary on top before serving. Enjoy the warm, rich flavors of this autumn-inspired dish!
