(Recipe) Goat Cheese, Beet, and Avocado Salad

Johan from Dutch Health Store is an enthusiast when it comes to simple, nutritious meals. He often whips up this delightful Goat Cheese, Beet, and Avocado Salad at home. It’s a recipe favored for its simplicity and rich flavors, which comes together in just 15 minutes! Perfect for a quick, fulfilling meal, this salad combines the earthiness of beets with the creamy texture of avocado and the tangy kick of goat cheese, topped with the crunch of walnuts.

Ingredients

  • 500g cooked red beets
  • 2 avocados
  • Extra virgin olive oil
  • White wine vinegar
  • Mustard (fine or coarse)
  • Black pepper
  • Salt
  • 80g arugula
  • 160g goat cheese (e.g., honey-flavored salad cheese balls)
  • 40g roasted walnuts
  • A handful of finely chopped fresh dill

Instructions:

  1. Chop the red beets and avocados into pieces.
  2. Prepare a dressing by whisking together 4 tablespoons of extra virgin olive oil, 1 tablespoon of white wine vinegar, 1 teaspoon of mustard, and a pinch each of salt and pepper.
  3. In a salad bowl, lay a bed of arugula. Add the chopped beets and avocados.
  4. Sprinkle the goat cheese over the top, drizzle with the dressing, and garnish with roasted walnuts and chopped dill.
