(Recipe) Carpaccio Flammkuchen

Everything with carpaccio is delicious, but this Carpaccio Flammkuchen is definitely in our top 3. We top the Flammkuchen dough with all the classic carpaccio flavors: truffle mayonnaise, arugula, Parmesan cheese, and roasted pine nuts. You know what that means: this is going to be tasty!

Ingredients

For 1 Carpaccio Flammkuchen:

  • 40 grams Parmesan cheese
  • 25 grams pine nuts
  • 5 tablespoons mayonnaise
  • 2 tablespoons black sesame seeds
  • 2 portions carpaccio
  • 1 ½ teaspoons truffle tapenade
  • 1 egg yolk
  • 1 Flammkuchen dough
  • Pepper
  • Arugula
  • Salt

Instructions

Step 1
Preheat the oven to 215°C (419°F).

Step 2
Roll out the Flammkuchen dough on a baking sheet lined with parchment paper. Slightly roll up the edges. Brush the edges with egg yolk (we use a silicone brush for this). Sprinkle black sesame seeds over the edges. Bake the crust in the preheated oven for 15 minutes. Meanwhile, roast the pine nuts in a dry skillet.

Step 3
Mix the mayonnaise with truffle tapenade. Once the crust has cooled a bit, spread the truffle mayonnaise mixture over the base of the Flammkuchen. Top with carpaccio. Season with salt and pepper.

Step 4
Finish the Carpaccio Flammkuchen with arugula, grated Parmesan cheese, and the roasted pine nuts.
