(Recipe) Blueberry Breakfast Cakes

Ingredients
- 200 g oats
- 50 g shredded coconut
- 50 g maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 3 tablespoons olive or coconut oil
- 3 eggs
- 150 g frozen or fresh blueberries

Mix the oats with 375 milliliters of water or milk and a pinch of salt to make a porridge. Let it sit for 2 to 3 hours or overnight.

Preheat the oven to 175°C (350°F).

Beat the remaining ingredients, except the blueberries, together and stir them into the soaked oats. Then fold in the blueberries. Pour the batter into a greased baking tin, such as a muffin tin with twelve cups.

Bake the cakes for 35 minutes or until they spring back when gently pressed. Let them cool for 10 minutes before removing them from the tin. Cool them completely on a wire rack.
