(Recipe) Blueberry Breakfast Cakes

Ingredients

  • 200 g oats
  • 50 g shredded coconut
  • 50 g maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 3 tablespoons olive or coconut oil
  • 3 eggs
  • 150 g frozen or fresh blueberries

Instructions

  • Mix the oats with 375 milliliters of water or milk and a pinch of salt to make a porridge. Let it sit for 2 to 3 hours or overnight.

  • Preheat the oven to 175°C (350°F).

  • Beat the remaining ingredients, except the blueberries, together and stir them into the soaked oats. Then fold in the blueberries. Pour the batter into a greased baking tin, such as a muffin tin with twelve cups.

  • Bake the cakes for 35 minutes or until they spring back when gently pressed. Let them cool for 10 minutes before removing them from the tin. Cool them completely on a wire rack.
