Introduction

Stamppot ‘Hete Bliksem’ translated: ‘Hot Lightning’

When you think of the Netherlands, the first words that pop into your head are wooden shoes, bicycles, windmills, cows and tulips. But Holland would not be Holland without its typical stamppot! A creamy dish with boiled potatoes, combined with vegetables that are finely mashed together (hence the name “stamppot”, which literally means “mashed pot”).

For stamppot, there is not just one recipe, no, stamppot comes in all colours and shapes and therefore (although it is mainly a winter dish) it is delicious to eat all year round.

One of the most famous old Dutch dishes is Hete Bliksem (Hot Lightning). Don’t ask me where this particular name comes from, but what I do know is that this is a delicious dish and it can be served in no time at all.

Stamppot Hete Bliksem

  • 30 mins
  • 2-3 persons

Ingredients

  • 800 gr peeled sweet potatoes
  • 500 gr apples (combine sweet and sour apples)
  • 1 large onion
  • Scoop of ghee
  • Dash of coconut milk
  • Pepper and salt
  • Pinch of cinnamon

Directions

  1. Cut the potatoes into chunks. Peel the apples, peel the onion and cut both into pieces.
  2. Heat a pan with water on the fire.
  3. Add the potatoes and onion, and after 5 minutes the apples as well.
  4. Cook for a total of about 15 minutes until the potatoes are done.
  5. Drain and return them to the pan.
  6. Mash it all with a masher and make the mash creamy with a lump of ghee and the coconut milk.
  7. Season it with pepper, salt and a pinch of cinnamon.
