2 packs of oyster mushrooms

2 red onions

1 red bell pepper

2 tablespoons shawarma spices

Olive oil

Approx. 600g kohlrabi

3 tablespoons skyr (or Greek yogurt)

1 tablespoon mayonnaise

A handful of fresh flat-leaf parsley

1 garlic clove
Instructions

Prepare the Kohlrabi Fries

Wash the kohlrabi and cut it into fry-sized sticks.

Bring a pot of water with a pinch of salt to a boil and add the fries. Parboil them for about 5 minutes, ensuring they’re not fully cooked.

Drain and rinse the fries under cold water. Let them dry.

Pat the fries dry with a clean kitchen towel, drizzle with olive oil, and toss to coat evenly.

Preheat the Oven or Air Fryer

Preheat your oven or air fryer to 190-200°C (375-390°F).

Make the Garlic Sauce

Combine the mayonnaise and skyr in a bowl.

Add the minced garlic clove, finely chopped parsley, and season with salt and pepper. Mix well and set aside.

Prepare the Vegetables

Tear the oyster mushrooms into strips.

Cut the red bell pepper into strips and the red onions into thin half-rings.

Bake the Fries

Spread the kohlrabi fries on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until golden brown. If using an air fryer, check after 7 minutes and shake the basket.

Cook the Shawarma

While the fries are in the oven, heat a splash of olive oil in a frying pan over medium heat.

Sauté the onion rings for about 5 minutes until softened.
