Ingredients

  • 2 packs of oyster mushrooms

  • 2 red onions

  • 1 red bell pepper

  • 2 tablespoons shawarma spices

  • Olive oil

  • Approx. 600g kohlrabi

  • 3 tablespoons skyr (or Greek yogurt)

  • 1 tablespoon mayonnaise

  • A handful of fresh flat-leaf parsley

  • 1 garlic clove

Instructions

  1. Prepare the Kohlrabi Fries

    • Wash the kohlrabi and cut it into fry-sized sticks.

    • Bring a pot of water with a pinch of salt to a boil and add the fries. Parboil them for about 5 minutes, ensuring they’re not fully cooked.

    • Drain and rinse the fries under cold water. Let them dry.

    • Pat the fries dry with a clean kitchen towel, drizzle with olive oil, and toss to coat evenly.

  2. Preheat the Oven or Air Fryer

    • Preheat your oven or air fryer to 190-200°C (375-390°F).

  3. Make the Garlic Sauce

    • Combine the mayonnaise and skyr in a bowl.

    • Add the minced garlic clove, finely chopped parsley, and season with salt and pepper. Mix well and set aside.

  4. Prepare the Vegetables

    • Tear the oyster mushrooms into strips.

    • Cut the red bell pepper into strips and the red onions into thin half-rings.

  5. Bake the Fries

    • Spread the kohlrabi fries on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until golden brown. If using an air fryer, check after 7 minutes and shake the basket.

  6. Cook the Shawarma

    • While the fries are in the oven, heat a splash of olive oil in a frying pan over medium heat.

    • Sauté the onion rings for about 5 minutes until softened.

    • Add the bell pepper and oyster mushrooms, and turn up the heat. Stir-fry for another 5 minutes.

    • Add the shawarma spices and season with salt and pepper to taste.

  7. Serve

    • Plate the kohlrabi fries alongside the oyster mushroom shawarma.

    • Drizzle with the garlic sauce and serve with a refreshing salad, such as a red cabbage slaw.
