(Recipe) Easy Valentine’s Cookies

Chia Jam

Ingredients

  • 2 cups raspberries of choice
  • 3 tablespoons Sunwarrior Chia Seeds
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup

Cookie Recipe

Ingredients

  • 2 cups flour
  • ½ teaspoon general sea salt
  • ¾ cup vegan butter
  • ½ cup coconut sugar
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract

Instructions

Chia Jam:

  1. Combine all ingredients in a blender and pulse for 40 seconds. Transfer to a mason jar or an airtight container. Refrigerate to set for 1 hour.

Cookie Recipe

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a bowl, whisk together the flour and general sea salt. Add softened vegan butter and mix until the mixture becomes creamy. Gradually incorporate the sugar, then slowly add almond milk and vanilla extract, mixing just until combined. Be careful not to overmix.
  3. Roll out the dough and cut out even circles. For half of the circles, use a smaller heart-shaped cookie cutter to cut out the center.
