(recipe) Creamy Curries Cabbage Casserole with Ground Beef

Ingredients (Serves 2-3)

  • 500g potatoes (floury variety)
  • 400g pointed cabbage (about half a head for two people)
  • 1 red onion
  • 2 cloves of garlic
  • 200g ground beef (half beef, half pork preferred)
  • 2 tsp curry powder
  • 100g crème fraîche
  • Salt & pepper to taste

Instructions

  1. Prepare the potatoes: Peel and cut them into chunks. Boil in salted water for about 20 minutes until tender, then drain.
  2. Sauté the onion: Finely chop the red onion and sauté in a large pan with a little oil for 2 minutes until soft.
  3. Cook the beef: Add the ground beef to the pan and cook until browned and crumbly.
  4. Slice the cabbage: Cut the pointed cabbage in half and slice into thin strips, discarding the core. Add it to the pan with the beef and cook until wilted.
  5. Add the flavor: Mince the garlic and stir it into the cabbage mixture. Add the curry powder and season with a bit of salt.
  6. Make the mashed potatoes: Mash the drained potatoes with crème fraîche, adding a splash of water until smooth and creamy. Season generously with black pepper and a little salt.
  7. Assemble the casserole: Preheat the oven to 180°C (350°F). Transfer the cabbage and beef mixture into an ovenproof dish, pressing it down slightly. Spread the mashed potatoes on top, smoothing with the back of a spoon.
  8. Bake: Place in the oven and bake for 15 minutes, or until the top turns golden.
  9. Serve & enjoy! Let it cool slightly before serving. Perfect with a side of fresh greens or a dollop of extra crème fraîche.

Enjoy this delicious, warming casserole as you embrace the cozy vibes of February!
