Nettle & Ginger Ice Cream

Ingredients:

  • 3-4 Green Apples, loosely chopped
  • 1/3 cup Coconut Milk or Cream (scoop the top off a full-fat can)
  • 2 Tbsp Coconut Cream Powder
  • 1 Tbsp Nettles, blended into a fine powder
  • 1 Tsp Vanilla Extract (or substitute with pure Vanilla Powder)
  • 4 Tbsp Maple Syrup, Honey, or Sweetener of choice
  • 1-2 Tsps Ginger Root, grated
  • Pinch of Salt
  • For Color: Liquid Chlorophyll or Natural Green Food Coloring

Salted Honey Sesame Spirals

Ingredients:

  • 2 Tbsp Sesame Seeds (1 Tbsp White, 1 Tbsp Black)
  • 1/8 Cup Honey
  • Generous Pinch of Salt
  • 1/8 Tsp Rose Powder
  • 1/8 Tsp Ginger Powder

Preparation Nettle & Ginger Ice Cream:

  1. Add all ingredients to a blender except for the dried nettles.
  2. Blend the dried nettles into a fine powder using a clean coffee or spice grinder. Sift the powder into the blender, discarding any leftover bits.
  3. Blend on high until the mixture is creamy and smooth.
  4. Pour into an ice cream maker and churn until smooth and frozen.
    • If you don’t have an ice cream maker, pour the mixture into a container and place it in the freezer. Stir every 15 minutes until it reaches a soft frozen consistency.

Salted Honey Sesame Spirals

  1. Line a baking pan with parchment paper.
  2. Heat a small skillet over medium heat.
  3. Add sesame seeds and toast until fragrant, stirring frequently.
  4. Add honey and whisk continuously. The honey will bubble and froth. Keep whisking every 10 seconds until the bubbles get smaller and the mixture turns smoother and darker, similar to caramel. This takes about 10 minutes.
  5. Carefully scoop the hot mixture by the tablespoon onto the parchment-lined pan, forming thin circles. Alternatively, pour it evenly onto the pan in one large spread.
  6. Once it’s cool enough to touch, roll the circles into spirals or cut the larger spread into shards.
  7. Serve with the ice cream!
