The Perfect Summer Dish for Hot Days

With temperatures climbing up to 30 degrees in the Netherlands this week, the last thing anyone wants is to spend hours in a hot kitchen. That’s why this Greek Hummus Platter is the ideal choice—it’s light, fresh, and takes just minutes to prepare. No cooking skills required, and no stress.

Whether you’re hosting friends in the garden or just want a quick and satisfying lunch without turning on the stove, this easy hummus board delivers. It’s colorful, customizable, and full of Mediterranean flavor. And while it’s technically not a salad, it has all the crisp, juicy vegetables and refreshing ingredients you want on a warm day.

Ingredients

  • 1 pack whole wheat pita bread

  • 2 × 10 oz containers of plain hummus (or homemade if you have time)

  • 4 mini cucumbers

  • ½ red bell pepper

  • ½ cup grape tomatoes

  • ¼ cup crumbled feta (regular or low-fat)

  • ¼ cup large pitted olives

  • ¼ cup pepperoncini

  • 1 teaspoon Greek seasoning

  • Drizzle of extra virgin olive oil

  • Handful of toasted garbanzo beans (store-bought or homemade)

  • Fresh parsley for garnish

Note: If you’re feeling ambitious, homemade hummus adds something special—but store-bought works perfectly. Just go for a natural flavor without garlic or herbs, so it doesn’t clash with the toppings.

How to Make It

  1. Make the Pita Chips
    Slice pita bread into wedges (6–8 per pita). Place on a baking tray, drizzle with olive oil, and sprinkle with Greek seasoning.
    Bake at 350°F (175°C) for 8 minutes, or until crisp and golden. Remove from oven, sprinkle with parsley, and let cool. Prefer soft pita? You can skip the baking step and serve it fresh.

  2. Chop the Veggies
    While the pita bakes, slice the cucumbers, red bell pepper, and pepperoncini. Halve the grape tomatoes. Set aside.

  3. Assemble the Platter
    Spread the hummus onto a large serving dish or wooden board. Use a spoon to create a shallow dip in the center.

  4. Top It Off
    Add your chopped veggies evenly over the hummus. Sprinkle on the crumbled feta and toasted garbanzo beans.

  5. Final Touches
    Drizzle with olive oil and a little more Greek seasoning. Add your pita wedges around the sides and garnish with parsley.
