Ingredients
  • Lemon Curd Cream

    • 200 ml cold whipping cream

    • 20 g icing sugar

    • 2–4 tbsp lemon curd (to taste)

  • French Toast

    • 250 ml whole milk

    • 2 large eggs

    • 2 tsp vanilla sugar (or 1 tsp vanilla extract + 1 tsp sugar)

    • 8 thick slices brioche

    • Butter for frying

  • Toppings

    • 100 g mixed red berries (raspberries, strawberries, blueberries)

    • Maple syrup, to drizzle

You’ll also need

Hand mixer • Large shallow dish • Non‑stick frying pan

Method
  1. Whip the cream

    • Beat cold cream with icing sugar until soft peaks form.

    • Stir lemon curd until smooth, fold into the cream, and whip briefly until just firm.

    • Chill until serving.

  2. Make the custard dip

    • In a shallow dish, whisk milk, eggs and vanilla sugar.

  3. Cook the brioche

    • Heat a frying pan over medium heat and melt a knob of butter.

    • Dip each brioche slice quickly on both sides (don’t soak too long or it gets soggy).

    • Fry 2–3 minutes per side until golden and crisp, adding more butter as needed.

  4. Assemble & serve

    • Place two slices on each plate.

    • Spoon over lemon curd cream, scatter berries, and finish with a drizzle of maple syrup.

Tips & Variations
  • Bigger appetites? Add an extra slice per person and whisk in 125 ml milk, 1 egg and 1 tsp vanilla sugar.

  • Flavour twist: Swap 50 ml of the milk for cream for an even richer custard.

  • Different toppings: Try banana with melted chocolate and maple syrup, or simply whipped cream and strawberries.

  • Lemon curd: Use homemade or your favourite store brand.
