(recipe) Creamy Curries Cabbage Casserole with Ground Beef
Ingredients (Serves 2-3)
- 500g potatoes (floury variety)
- 400g pointed cabbage (about half a head for two people)
- 1 red onion
- 2 cloves of garlic
- 200g ground beef (half beef, half pork preferred)
- 2 tsp curry powder
- 100g crème fraîche
- Salt & pepper to taste
Instructions
- Prepare the potatoes: Peel and cut them into chunks. Boil in salted water for about 20 minutes until tender, then drain.
- Sauté the onion: Finely chop the red onion and sauté in a large pan with a little oil for 2 minutes until soft.
- Cook the beef: Add the ground beef to the pan and cook until browned and crumbly.
- Slice the cabbage: Cut the pointed cabbage in half and slice into thin strips, discarding the core. Add it to the pan with the beef and cook until wilted.
- Add the flavor: Mince the garlic and stir it into the cabbage mixture. Add the curry powder and season with a bit of salt.
- Make the mashed potatoes: Mash the drained potatoes with crème fraîche, adding a splash of water until smooth and creamy. Season generously with black pepper and a little salt.
- Assemble the casserole: Preheat the oven to 180°C (350°F). Transfer the cabbage and beef mixture into an ovenproof dish, pressing it down slightly. Spread the mashed potatoes on top, smoothing with the back of a spoon.
- Bake: Place in the oven and bake for 15 minutes, or until the top turns golden.
