In addition to smelling divine, this moreish bread will make you darn popular at those upcoming spring picnics. That’s if you manage not to eat it all beforehand.
Because this bread is a fruit party, and fruit is healthy, right?
Make sure you use super-ripe bananas for this recipe – we’re talking black and almost dripping. This is the key to a deliciously decadent banana bread.

Ingredients
- 3 large bananas, very ripe
- 1/2 cup/110g coconut sugar
- 5 tablespoons coconut oil, melted
- 1.5 cups/200g wholewheat flour
- 3 teaspoons cinnamon
- 1 teaspoon vanilla
- 2 teaspoons baking powder
- 4 dates, chopped
- 1/4 cup/50g cup very dark chocolate, chopped
- 1/2 teaspoon coarse sea salt
Instructions
- Preheat the oven to 200 degrees C/390 degrees F.
- Place the coconut oil in a bain-marie to melt. For ease, I usually just put the whole jar of coconut oil into a saucepan of water, and heat for 5 mins.
- Mash the bananas with a folk, and then add the coconut sugar and the oil.
- Add in the flour, cinnamon, vanilla and baking powder. Stir.
- Add the dates and chocolate. Stir.
- Pour the mixture into a silicone bread pan. Place pan in the oven for 20 mins.
- After 20 mins, check the bread, sprinkle the salt over the top, cover the bread pan with tin foil, and put back in the oven for 40 more minutes.
- Remove from oven and leave to cool before tasting.
And now the bananery goodness has been released from its fiery furnace, it’s crying out ‘eat me, eat me, you hungry vegan’.
But don’t even think about tasting even one morsel before you’ve poured yourself a steaming cup of Earl Grey to go with.
