Ingredients
- 1 tablespoon coconut oil
- 600 g yellow onions, finely chopped
- 1 heaped tablespoon turmeric (or curry powder)
- 1 heaped tablespoon coriander
- 1–2 cm fresh ginger, finely grated (or ½ tablespoon ground ginger)
- Zest and juice (including pulp) of 1 orange
- 6 eggs
- 300–400 g finely grated raw potatoes
- 50 g coconut flour
- 2 apples, finely chopped
- 3 cloves garlic, minced
- Salt or tamari, to taste
Instructions
- Heat the coconut oil in a frying pan. Sauté the onions, garlic, and apples until softened.
- Add turmeric, coriander, ginger, and mix well. Stir in orange juice, pulp, and zest, then remove from heat.
- In a large bowl, combine eggs, grated raw potatoes, coconut flour, and a pinch of salt or tamari. Briefly mix with dough hooks on a hand mixer.
- Add the onion-apple mixture to the egg-potato mixture and stir until well combined.
- Spread the mixture evenly onto a parchment-lined baking sheet or press firmly into a pie dish.
- Bake for approximately 1 hour in a preheated oven at 140°C (285°F).
- Allow the flatcake to cool thoroughly, drizzle lightly with honey if desired, and refrigerate for a few hours until firm.
