Our delicious Onion Flatcake with Apple, Orange, and Fresh Ginger is the perfect recipe to celebrate today’s beautiful weather. This dish blends sweet and savory ingredients into a wonderfully vibrant, sunny treat—ideal for enjoying outdoors or bringing a little sunshine to your table!

Ingredients

  • 1 tablespoon coconut oil
  • 600 g yellow onions, finely chopped
  • 1 heaped tablespoon turmeric (or curry powder)
  • 1 heaped tablespoon coriander
  • 1–2 cm fresh ginger, finely grated (or ½ tablespoon ground ginger)
  • Zest and juice (including pulp) of 1 orange
  • 6 eggs
  • 300–400 g finely grated raw potatoes
  • 50 g coconut flour
  • 2 apples, finely chopped
  • 3 cloves garlic, minced
  • Salt or tamari, to taste

Instructions

  1. Heat the coconut oil in a frying pan. Sauté the onions, garlic, and apples until softened.
  2. Add turmeric, coriander, ginger, and mix well. Stir in orange juice, pulp, and zest, then remove from heat.
  3. In a large bowl, combine eggs, grated raw potatoes, coconut flour, and a pinch of salt or tamari. Briefly mix with dough hooks on a hand mixer.
  4. Add the onion-apple mixture to the egg-potato mixture and stir until well combined.
  5. Spread the mixture evenly onto a parchment-lined baking sheet or press firmly into a pie dish.
  6. Bake for approximately 1 hour in a preheated oven at 140°C (285°F).
  7. Allow the flatcake to cool thoroughly, drizzle lightly with honey if desired, and refrigerate for a few hours until firm.
