(Recipe) Asian Cucumber Salad

With the arrival of summer in the Netherlands, it’s time to enjoy fresh and light dishes. This Asian cucumber salad is the perfect addition to your warm-weather meals. (Recipe) Asian Cucumber Salad

Ingredients


  • 1 cucumber
  • 1 clove garlic
  • 1 cm fresh ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons sushi vinegar
  • 2 teaspoons crispy chili oil
  • 2 tablespoons sesame oil
  • 1 tablespoon black sesame seeds

 

Instructions


  1. Wash the cucumber and slice it into thin slices. A mandoline works best for this, but you can also use a cheese slicer or a knife.
  2. Mix the soy sauce with the sushi vinegar, crispy chili oil, and sesame oil.
  3. Finely chop the garlic and ginger, then add them to the dressing.
  4. Add the cucumber slices to the dressing, mix well, and garnish the salad with sesame seeds.
