(Recipe) Stuffed Mushrooms with Whipped Feta

Create this tasty bite easily with chestnut mushrooms and whipped feta cheese. Perfect for any celebration throughout the year.

What is Whipped Feta?

Whipped feta has recently become a trend, possibly started on TikTok. Regardless of its origin, it was the perfect filling for the stuffed mushroom recipe I wanted to try.

About the Mushrooms

I used chestnut mushrooms for this dish, but regular mushrooms will work too. I personally find chestnut mushrooms to be more flavorful and sturdy, making them ideal for this recipe.

Sauté the mushrooms beforehand in a pan with oil and butter to remove excess moisture. Drain them upside-down on a paper towel. You can reheat them in the oven right before serving to ensure they are warm and moisture-free.

Whipping the Feta

For whipping the feta, crumble an entire block into a food processor. Add yogurt and spices, then blend until smooth. I forgot the yogurt once and used milk instead; it works but results in a thinner texture. Note that feta is quite salty, so no additional salt is needed in this recipe or on the mushrooms.

You can prepare the stuffed mushrooms in advance and keep them refrigerated. Before serving, you can either serve them cold or warm them up in the oven at 100°C. If reheating, cover with aluminum foil to prevent the feta from drying out.

Recipe from Simone’s Kitchen

Ingredients

  • 400g chestnut mushrooms
  • 250g feta cheese
  • 1 tsp smoked paprika
  • 75g Greek yogurt
  • 1 tsp lemon juice
  • Zest of 1 lemon
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped fresh parsley
  • 1 garlic clove
  • Butter and oil for frying
  • 1 tbsp pistachios for garnish

Instructions

  1. Remove the stems from the mushrooms and clean the insides, if necessary.
  2. Heat a frying pan with oil and butter, then sauté the mushrooms over low heat until well-cooked. Alternatively, you can cook them in the oven, but they may dry out more quickly.
  3. Prepare the whipped feta by placing the feta, fresh herbs, spices, and Greek yogurt into a food processor. Blend until smooth.
  4. Pipe the whipped feta into the cooked mushrooms and garnish with a little thyme. Serve warm.
