(Recipe) Spicy Baked Buffalo Cauliflower Wings

Eating healthy doesn’t have to mean compromising on taste. These spicy cauliflower wings are a clean, gluten-free twist on a classic comfort food that will leave you feeling satisfied and energized.

Ingredients

For the cauliflower:

  • 1 large cauliflower, washed and cut into bite-sized florets

For the batter:

  • ½ cup plus 2 tablespoons (150ml) plant milk
  • ¾ cup (100g) gluten-free flour
  • 1 tablespoon smoked paprika
  • 2 teaspoons chili flakes
  • 2 cloves garlic, finely chopped or minced
  • 1 teaspoon cumin
  • ½ – 1 teaspoon salt
  • ½ – 1 teaspoon black pepper
  • Optional: 1 tablespoon sesame seeds to sprinkle before baking

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Prepare the cauliflower: Wash and cut the cauliflower into bite-sized florets. Pat them dry thoroughly to help the batter stick.
  3. Make the batter: In a mixing bowl, combine the plant milk, gluten-free flour, smoked paprika, chili flakes, garlic, cumin, salt, and pepper. Mix until smooth.
  4. Coat the cauliflower: Dip each floret into the batter, ensuring it’s fully coated. Place them on a lined and lightly greased baking sheet.
  5. Optional topping: Sprinkle sesame seeds over the coated cauliflower wings for added crunch.
  6. Bake: Cook in the preheated oven for 20 minutes, turning the florets after 10 minutes for even crispiness.
  7. Prepare the dip: Mix a small bowl of vegan mayonnaise with 2 tablespoons of vegan yogurt and a finely chopped or minced clove of garlic.
  8. Serve and enjoy: Pair your spicy buffalo cauliflower wings with the creamy garlic mayo dip and savor this deliciously healthy treat!
