- 125g Oat Flour
- 30g Rolled Oats
- 30g Ground Flaxseed
- 1 tbsp. Sunflower Seeds
- 2 tbsp. Shredded Coconut
- 1 tsp. Chia Seeds
- 1 tsp. Raw Quinoa
- 1/4 tsp. Baking Soda
- A pinch of Sea Salt
- 60g Minced Dried Fruit (Like Apricots And Raisins)
- 60g Softened Butter
- 60g Honey
- 2 tsp. Vanilla Extract
- 1 Egg White

Begin by preheating your oven to 180ºC.

Prepare a mini muffin pan by spraying it with nonstick spray.

In a medium bowl, combine the oat flour, rolled oats, ground flaxseed, sunflower seeds, shredded coconut, chia seeds, raw quinoa, baking soda, and a pinch of sea salt.

Add the minced dried fruit, softened butter, honey, vanilla extract, and egg white to the bowl.

Mix everything together thoroughly—using your hands can make this process easier! Aim for a consistency similar to oatmeal cookie dough.

Fill about 16 muffin molds with your dough, pressing down and filling them to the brim.
