(Recipe) Rhubarb Crumble

As a proud member of the Dutch Health Store team, I’m thrilled to share one of my all-time favorite recipes with you: Rhubarb Crumble! We’re right in the middle of rhubarb season, and this is the perfect time to make the most of this versatile vegetable. Yes, you read that right – rhubarb is actually a vegetable, although its slightly tart flavor makes it seem more like a fruit. Let’s dive into this delicious, healthy dessert that’s also gluten-free!

Ingredients (Serves 4)

  • 500 grams rhubarb
  • 100 ml honey
  • 50 grams almond flour
  • 50 grams flaked almonds
  • 50 grams oats (gluten-free if needed)
  • 40 grams solid coconut oil
  • 1/2 organic orange
  • 1 cinnamon stick
  • Pinch of salt

Delicious with

  • Greek yogurt or vanilla ice cream

Instructions

  1. Preheat your oven to 180°C (350°F) fan-forced.

  2. Prepare the rhubarb: Wash and cut the rhubarb into pieces, removing the ends and any blemishes.

  3. Cook the rhubarb: In a pan, simmer the rhubarb with the zest of the orange, the cinnamon stick, and half of the honey for five minutes. Taste and add more honey if needed.

  4. Remove the cinnamon stick and spread the rhubarb in a greased baking dish.

  5. Make the crumble: Mix the flaked almonds, almond flour, oats, the remaining honey, and coconut oil together. Use your fingers to crumble the mixture until it forms a crumbly dough. If it becomes too soft, chill it in the fridge briefly. Spread the crumble over the rhubarb.

  6. Bake the crumble: Bake in the preheated oven for 20 minutes. Keep an eye on it and cover with aluminum foil if it browns too quickly.

  7. Serve immediately with Greek yogurt or vanilla ice cream. If you let it cool, the crumble will soften. For a crunchy top, reheat briefly in the oven.
