(Recipe) Grilled Shrimp Skewers with Pineapple Mint Marinade

This super simple grilled shrimp comes together with the most delicious pineapple mint marinade! Easy, fresh, and a great summer dinner for a busy weeknight or to feed a crowd.

So today, we’re going all out on easy, healthy, and indisputable delicious with these grilled shrimp skewers. I love that these can be customizable with your personal favorite veggies. But the best part? Shrimp cooks lightening fast on the grill making this a fantastic weeknight choice!

(Recipe) Grilled Shrimp Skewers with Pineapple Mint Marinade

Instructions

Here is what we need for the marinade:

  • 1 cup diced fresh pineapple
  • 1/4 cup loose fresh mint
  • 2 cloves garlic
  • 2/3 cup olive oil or avocado oil
  • 1/4 cup apple cider vinegar
  • 3 tbsp lime juice
  • 3 tbsp coconut aminos or GF Tamari Soy Sauce

What we need for the Skewers:

  • 2 lbs peeled and deveined shrimp
  • 1 red bell pepper cut into 1 square inch slices
  • 1 orange bell pepper cut into 1 square inch slices
  • 1/2 red onion cut into 1 square inch slices
  • 2 cups pineapple chunks
  • salt and pepper to taste

Instructions

  1. Make your marinade by combining all marinade ingredients into a food processor or blender. Pulse until smooth. Divide the marinade in half, reserving some for serving. Set aside.

  2. Prepare your skewers by threading the shrimp and veggies in any order you like. You can also do skewers with all shrimp, and some with all veggies. Place the skewers in a large container or bag, and pour 1/2 of the the marinade on the prepared skewers. Marinade for as little as 15 minutes, or as long as 1 hour.

  3. Prepare your grill. Heat to a medium high heat, or 450 degrees. Once heated, place skewers on the grill and cook for 3-4 minutes per side. Remove from heat. Let cool for a few minutes before serving. Pour the reserved marinade over the shrimp and serve. Salt and pepper to taste.
