Spiced Pumpkin Loaf
(Serves 8)
Ingredients
- 1 ripe banana
- 5 dates
- 2 eggs
- 175 g buckwheat flour
- 3 heaping tsp mixed spice (koekkruiden)
- 15 g psyllium husk
- 1 tsp baking soda
- A handful of pumpkin seeds
- 75 g yogurt
- 1 small orange pumpkin
Instructions

Preheat the Oven:
Preheat your oven to 200°C (fan). -
Roast the Pumpkin:
Cut the pumpkin into pieces and roast them in the oven for 20–30 minutes until soft. Let the oven cool down to 170°C afterward. -
Prepare the Wet Mixture:
Blend the roasted pumpkin with the banana, chopped dates, and eggs until smooth and frothy. Add the yogurt and blend again briefly. -
Prepare the Dry Mixture:
In a mixing bowl, combine the buckwheat flour, psyllium husk, mixed spice, baking soda, and a pinch of salt. Stir well to combine. -
Mix the Batter:
Pour the pumpkin mixture into the bowl with the dry ingredients. Mix thoroughly until a smooth batter forms. -
Assemble and Bake:
Line a loaf tin with baking paper and pour the batter in evenly. Sprinkle the pumpkin seeds on top. Bake in the preheated oven at 170°C for 45 minutes or until golden brown and cooked through. -
Cool and Serve:
Allow the loaf to cool completely before slicing. Serve with a smear of (cream) butter for an extra treat.
