They are easy to make, full of flavor, and perfect as a snack, side dish, or light meal. By baking them in the oven instead of frying, they turn out beautifully crispy without excess oil. Ingredients:
- 400 g starchy potatoes
- 200 g onion
- Optional: 2 cloves of garlic
- 50 g whole wheat flour
- Coarse sea salt and pepper to taste
- 2 eggs
- Olive oil for greasing the baking paper
- For the dip:
- Sour cream, quark, or thick yogurt
- Finely chopped garlic, onion, chives, or dill to taste
Instructions:
- Peel the potatoes and onions. Grate them coarsely or finely chop them in a food processor. Add the garlic if using.
- Mix the grated mixture with the whole wheat flour, salt, and pepper. Taste and adjust seasoning if needed.
- Add the eggs and mix well until combined.
- Generously grease a sheet of baking paper with olive oil.
- Form 14-20 small fritters and place them on the baking paper. Flatten slightly with the back of a spoon.
- Oven baking method:
- Preheat the oven to 140°C (285°F).
- Place the baking tray in the middle of the oven and bake for 10-15 minutes.
- Flip the fritters and bake for another 15 minutes, until golden and crispy on the outside and soft on the inside.
- Serve with a dip made of sour cream, quark, or thick yogurt, flavored with garlic, onion, chives, or dill.
