(Recipe) Healthy Flatbread with Grilled Vegetables

Fresh, colourful and packed with flavour, these healthy flatbreads make a delicious lunch or light dinner. Creamy whipped feta and skyr are topped with smoky grilled peppers, warm toasted spices and fresh herbs. Simple, nutritious and ready in no time.

Serves 4

Ingredients

125 g feta
300 g skyr
4 individual flatbreads
⅛ tsp chilli flakes
1 tsp coriander seeds
1 tsp cumin seeds
2 tsp toasted sesame seeds
4 bell peppers, preferably in different colours
3 tbsp olive oil, plus extra for drizzling
4 sprigs fresh dill
2 sprigs fresh mint
Salt and freshly ground black pepper

Method

1. Crumble the feta into a tall measuring jug and add the skyr. Blend with a hand blender until smooth and creamy. Season with black pepper and refrigerate until ready to use.
2. Add the chilli flakes, coriander seeds and cumin seeds to a mortar and lightly crush them with a pestle. Stir in the sesame seeds.
3. Toast the spice mixture in a dry frying pan for about 1 minute, until fragrant. Transfer to a small bowl and stir in ¼ teaspoon of salt.
4. Cut the bell peppers in half and remove the seeds. Mix 3 tablespoons of olive oil with a little salt and pepper, then brush the mixture over the peppers.
5. Heat a grill pan over high heat. Grill the peppers for about 2 minutes on each side, or until tender with dark charred grill marks. Remove from the pan and set aside.
6. Place the flatbreads in the still-hot grill pan and grill for 2–3 minutes, until warmed through and slightly crisp.
7. Spread each flatbread generously with the creamy feta and skyr mixture. Top with the grilled peppers and sprinkle over the toasted spice mixture.
8. Finish with fresh mint and dill leaves and a generous drizzle of good-quality olive oil. Serve immediately.
