(Recipe) Vegetable, Mozzarella & Ciabatta Skewers with Pesto

Fresh, colourful and incredibly easy to make, these vegetable skewers combine juicy tomatoes, crunchy vegetables, creamy mozzarella and ciabatta with a delicious pesto dip.

They are perfect for a summer lunch, as a healthy snack, or served as part of an appetiser spread. They are also a fun way to encourage children to eat a little more veg. And since there is absolutely no reason vegetables need to be boring, the more colourful the skewers, the better.

Ingredients

  • 4 slices ciabatta
  • 15 cherry tomatoes
  • 10 olives
  • ½ yellow bell pepper
  • 1 mini cucumber
  • 1 handful fresh spinach
  • 9 mini mozzarella balls
  • 1 small tub fresh pesto
  • 9 wooden skewers

Preparation

Step 1

Cut the ciabatta into bite-sized cubes.

Step 2

Wash the cucumber and bell pepper. Slice the cucumber into rounds and cut the bell pepper into bite-sized pieces.

Step 3

Thread the ciabatta, cherry tomatoes, olives, bell pepper, cucumber, spinach and mozzarella onto the skewers.

There is no particular order you need to follow. Alternate the colours and ingredients to create bright, colourful skewers.

Step 4

Arrange the finished skewers on a serving platter and serve with the fresh pesto on the side for dipping.

Make Them Your Own

These skewers are very easy to adapt to whatever vegetables you have at home. Try adding courgette, different coloured peppers, fresh basil, radishes or another favourite seasonal vegetable.

The mozzarella adds a creamy contrast to the fresh vegetables, while the ciabatta is especially delicious once dipped into the pesto.

For the best flavour, use freshly made or good-quality fresh pesto.

Perfect for Summer

Serve these skewers at a barbecue, picnic or summer get-together, or prepare them as an easy afternoon snack. If making them ahead, store them in an airtight container in the refrigerator for up to two days.
