Ingredients
- 2 tablespoons canola oil, divided
- 1 pound boneless pork loin, cut into strips
- 1 large carrot, thinly sliced
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 2 celery stalks, cut into strips
- 1 onion, cut into wedges
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons black bean sauce
- 2 1/2 cups low-sodium chicken broth
- 1/4 teaspoon black pepper
- 2 1/2 tablespoons cornstarch
- 2 tablespoons cooking wine or dry sherry
- 2 green onions, chopped for garnish
Instructions
-
Cook the Pork: Heat 1 tablespoon of canola oil in a wok or large skillet over medium-high heat. Add the pork strips and stir-fry until they’re brown. Remove the pork and set it aside.
-
Stir-Fry the Veggies: Add the carrots to the wok and cook for 2 minutes. Then add the bell peppers, celery, and onion. Cook for another 3 minutes or until the veggies are tender but still crisp. Remove them from the wok and set aside.
-
Prepare the Sauce: Add the remaining canola oil to the wok. Sauté the garlic and ginger for a minute. Stir in the black bean sauce and heat it up. Add the chicken broth and black pepper, and let it simmer for 3-4 minutes.
-
Thicken the Sauce: Mix the cornstarch and cooking wine together, then add it to the sauce. Stir well until the sauce thickens.
-
Combine and Serve: Add the cooked pork and veggies back into the wok. Stir everything together so it’s well-coated with the sauce. Garnish with chopped green onions.
