Ingredients

  • 12 apples, cored and sliced (leave the skin on for added color and flavor)
  • 1 orange, peeled and sliced (be sure to peel to avoid bitterness)
  • Enough water to cover the fruit by 2 inches
  • 1 tablespoon ground cinnamon (or 3 cinnamon sticks)
  • 1 teaspoon ground nutmeg (or ½ whole nutmeg)
  • 1 teaspoon whole allspice (or 1 teaspoon ground allspice)
  • 1 teaspoon whole cloves (or ¾ teaspoon ground cloves)

  • Large pot
  • Potato masher
  • Strainer, sieve, or cheesecloth
  • Pitcher

Instructions:

  1. Prep the Fruit:
    Begin by washing the apples thoroughly to remove any dirt or pesticides. Core and slice the apples, leaving the skin on. Peel the orange to prevent any bitterness and then slice it.

  2. Combine Ingredients:
    In a large pot, add the sliced apples and peeled orange. Pour in enough water to cover the fruit by about 2 inches.

  3. Add Spices and Simmer:
    Add the ground cinnamon, ground nutmeg, whole allspice, and whole cloves. Stir the mixture to combine.
    Bring the pot to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 3 hours. This allows the fruit and spices to release their flavors into the water.

  4. Mash the Fruit:
    After 3 hours of simmering, use a potato masher or large spoon to mash the apples and orange slices, extracting as much juice and flavor as possible.

  5. Simmer and Strain:
    Continue to simmer the mixture with the lid off for another hour.
    Pour the mixture through a sieve, strainer, or cheesecloth to remove the pulp and separate the liquid. Use a fine-mesh strainer or cheesecloth for a smoother texture or a regular strainer if you prefer a more rustic cider.

  6. Serve and Enjoy!
    Serve the cider warm in mugs, garnished with apple slices, cinnamon sticks, or star anise for an extra touch of elegance. You can also let it cool and serve it over ice for a chilled version.

  • For a sweeter cider, add ¼ cup of brown sugar, granulated sugar, or honey along with the spices.

  • This recipe can also be made in a crock pot. Cook on low for 7 hours, then mash the fruit and continue cooking for another hour.

Garnish Ideas:
Add a cinnamon stick, star anise, or thin apple slices for a beautiful presentation and extra flavor. To make apple slice garnishes, cut the apple crosswise into thin slices and make a small slit from the edge to the center so the slices can rest on the rim of the glass.
