(Recipe) Citrus Honey Grilled Chicken

As summer slowly comes to an end here in the Netherlands, the weather makes quite a shift. Just last week we were basking in 28°C sunshine, and now we’re adjusting to cooler days of around 18°C. It’s that in-between season where light, tropical flavors still feel right, but a touch of warmth and comfort is much appreciated. This Citrus Honey Grilled Chicken is the perfect dish for this transition: marinated in soy sauce, citrus, and honey, grilled to perfection, and finished with a sweet, refreshing garnish of orange and cilantro. It brings a little sunshine to the plate, even as the days grow cooler.

Ingredients

  • 3 tablespoons reduced-sodium soy sauce

  • 2 tablespoons honey

  • 2 tablespoons orange juice

  • 2 tablespoons lime juice

  • 1 tablespoon neutral oil (such as avocado or canola)

  • 2 large garlic cloves, grated

  • 1 pound boneless, skinless chicken thighs, trimmed

  • Fresh cilantro and orange slices, for garnish

Instructions

  1. In a large bowl, whisk together the soy sauce, honey, orange juice, lime juice, oil, and garlic. Add the chicken and toss well to coat. Cover and refrigerate for at least 30 minutes.

  2. Preheat the grill to medium heat and lightly oil the grill rack. Grill the chicken, turning once, until cooked through and an instant-read thermometer registers 165°F (74°C), about 12 minutes total.

  3. Meanwhile, pour the leftover marinade into a small saucepan. Bring to a boil, then reduce to a lively simmer. Cook until slightly thickened and reduced to about ¾ cup, 5–7 minutes.

  4. Serve the grilled chicken drizzled with the reduced sauce and finish with fresh cilantro and orange slices for a bright, refreshing touch.
