Ingredients

¼ cup chia seeds

1 cup milk of choice (fat-free milk, almond milk, or any milk you prefer)

½ teaspoon vanilla extract

1 cup nonfat plain Greek yogurt

1 tablespoon maple syrup (regular or sugar-free, or another sweetener you like)

½ teaspoon ground cinnamon, plus extra for topping

2 tablespoons natural unsweetened creamy peanut butter, melted for 30 seconds

1 large apple, cored and diced
Instructions

Add 2 tablespoons chia seeds to each of two 16-oz jars or containers with lids.

Pour ½ cup milk and ¼ teaspoon vanilla into each jar. Mix with a fork until the chia seeds are well combined.

Add ½ cup yogurt, ½ tablespoon maple syrup, and ¼ teaspoon cinnamon to each jar. Mix again, scraping the bottom and sides so the chia seeds don’t clump.

Seal the jars and refrigerate for at least 2 hours.

When you’re ready to eat, add half of the diced apple to each jar. Sprinkle with a little extra cinnamon and drizzle the melted peanut butter on top.
