This Apple Chia Pudding with Peanut Butter is a light and satisfying breakfast, snack, or healthy dessert. It’s high in protein, rich in fiber, and gives you steady energy throughout the day. Simple ingredients, quick prep, and great for meal prep.

Ingredients

  • ¼ cup chia seeds

  • 1 cup milk of choice (fat-free milk, almond milk, or any milk you prefer)

  • ½ teaspoon vanilla extract

  • 1 cup nonfat plain Greek yogurt

  • 1 tablespoon maple syrup (regular or sugar-free, or another sweetener you like)

  • ½ teaspoon ground cinnamon, plus extra for topping

  • 2 tablespoons natural unsweetened creamy peanut butter, melted for 30 seconds

  • 1 large apple, cored and diced

Instructions

  • Add 2 tablespoons chia seeds to each of two 16-oz jars or containers with lids.

  • Pour ½ cup milk and ¼ teaspoon vanilla into each jar. Mix with a fork until the chia seeds are well combined.

  • Add ½ cup yogurt, ½ tablespoon maple syrup, and ¼ teaspoon cinnamon to each jar. Mix again, scraping the bottom and sides so the chia seeds don’t clump.

  • Seal the jars and refrigerate for at least 2 hours.

  • When you’re ready to eat, add half of the diced apple to each jar. Sprinkle with a little extra cinnamon and drizzle the melted peanut butter on top.

  • Stir, enjoy, and you’re done!
