Ingredients

  • 2 small sweet potatoes

  • 1 small leek

  • 1 pak choi

  • 1 small container of crème fraîche

  • A handful of cherry tomatoes

  • 200 g brie

  • 1 tablespoon white wine vinegar

  • 50 g watercress (or a handful of lamb’s lettuce)

  • 1 red onion

  • Eggs (amount not specified in original recipe, adjust as needed)

  • Salt and pepper to taste

  • A little oil or butter for sautéing

Instructions

  1. Preheat the Oven:
    Set your oven to 180°C (350°F) to get it ready for baking.

  2. Prepare the Sweet Potatoes:
    Dice the sweet potatoes into small cubes. Boil them for about 15 minutes until they are tender.

  3. Sauté the Vegetables:

    • Slice the leek into half rings.

    • Cut the pak choi into strips.

  4. Mix the Egg Mixture:

    Add the cooked sweet potato cubes to the sautéed vegetables in the pan. Pour the egg and crème fraîche mixture evenly over the vegetables.
