(Recipe) Warming autumn soup with fennel, Dill and Salmon

As the weather turns chillier, there’s nothing quite like a comforting bowl of soup to warm you up. This delightful autumn soup combines the fresh, anise-like flavor of fennel with the aromatic touch of dill. Paired with tender smoked salmon, it’s a nourishing dish that’s both satisfying and healthful.

A Note on Ingredients:

Ingredients:

  • 2 fennel bulbs
  • 1 yellow onion
  • 1 tablespoon coconut oil
  • 100 ml coconut cream
  • 500 ml water
  • 1 vegetable stock cube
  • 100 grams smoked salmon
  • 4 sprigs of fresh dill
  • Salt and pepper to taste

Instructions

  1. Prepare the Fennel:

    1. Trim the stems and a small piece from the base of the fennel bulbs.
    2. Halve each bulb lengthwise and slice thinly.
  2. Sauté the Vegetables:

    1. Finely chop the yellow onion.
    2. In a large soup pot, heat the coconut oil over medium heat.
    3. Add the chopped onion and sauté for about 3 minutes until it becomes translucent.
    4. Add the sliced fennel to the pot and cook for an additional 5 minutes, stirring occasionally.
  3. Simmer the Soup:

    1. Pour in the water and add the vegetable stock cube.
    2. Stir until the stock cube is fully dissolved.
    3. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, or until the fennel is tender.
  4. Blend the Soup:

    1. Remove the pot from the heat.
    2. Stir in the coconut cream.
    3. Using a hand blender or transferring carefully to a countertop blender, purée the soup until smooth and creamy.
    4. Season with salt and pepper to taste.
  5. Prepare the Garnish:

    1. While the soup is simmering, cut the smoked salmon into thin strips.
    2. Finely chop the fresh dill.
  6. Serve:

    1. Ladle the hot soup into bowls.
    2. Garnish each serving with strips of smoked salmon and a sprinkle of fresh dill.
    3. Serve immediately and enjoy!
