Hutspot Recipe with Smoked Sausage (Instant Pot-Friendly)

 

Ingredients:

For the Hutspot:

  • 500 g Carrots (peeled and grated)
  • 500 g Onions (grated)
  • 1 kg Potatoes (Russet or any starchy variety, peeled and cut into medium-sized pieces)
  • 30 g Unsalted Butter
  • Salt and Pepper to taste
  • Optional: 150 ml vegetable stock for added flavor

For the Smoked Sausage:

  • 1 or 2 Rookworst (Smoked Sausages) (available at specialty stores or substitute with a similar smoked sausage)

Instructions:

  1. Prepare the Vegetables:

    • Peel the potatoes and cut them into medium-sized chunks.
    • Peel the carrots and grate them along with the onions using a food processor or box grater.
  2. Cook the Ingredients:

    • Add the grated carrots, onions, and potatoes to the Instant Pot.
    • Pour in 250 ml (1 cup) of water and season with a pinch of salt and pepper.
    • Place the rookworst on top of the vegetables (still in its packaging if vacuum-sealed, or wrapped in foil if not).
    • Secure the lid and cook on high pressure for 12 minutes.
  3. Release Pressure & Drain:

    • Perform a quick release to depressurize the pot.
    • Remove the sausage and set it aside. Drain any excess liquid from the Instant Pot insert.
  4. Mash & Season:

    • Add the butter to the cooked vegetables.
    • Mash everything together until smooth.
    • Taste and adjust seasoning with additional salt and pepper if needed.
  5. Heat the Sausage:

    • If the sausage needs further heating, remove it from the packaging and heat it in a skillet with a bit of water for a few minutes or follow the package instructions.
  6. Optional Enhancements:

    • Stir in 150 ml vegetable stock for a richer flavor (reduce butter or water if using this option).
    • For a creamier texture, add a splash of milk or cream.

Serving Suggestions:

Serve the Hutspot warm, topped with gravy if desired, and add slices of the rookworst alongside it. This combination of creamy mash and smoky sausage is pure comfort on a plate, perfect for chilly days.
