Step 1
Preheat the oven to 215°C (419°F).
Step 2
Roll out the Flammkuchen dough on a baking sheet lined with parchment paper. Slightly roll up the edges. Brush the edges with egg yolk (we use a silicone brush for this). Sprinkle black sesame seeds over the edges. Bake the crust in the preheated oven for 15 minutes. Meanwhile, roast the pine nuts in a dry skillet.
Step 3
Mix the mayonnaise with truffle tapenade. Once the crust has cooled a bit, spread the truffle mayonnaise mixture over the base of the Flammkuchen. Top with carpaccio. Season with salt and pepper.
Step 4
Finish the Carpaccio Flammkuchen with arugula, grated Parmesan cheese, and the roasted pine nuts.
