Preheat your oven to 180°C (350°F) fan-forced.

Prepare the rhubarb: Wash and cut the rhubarb into pieces, removing the ends and any blemishes.

Cook the rhubarb: In a pan, simmer the rhubarb with the zest of the orange, the cinnamon stick, and half of the honey for five minutes. Taste and add more honey if needed.

Remove the cinnamon stick and spread the rhubarb in a greased baking dish.

Make the crumble: Mix the flaked almonds, almond flour, oats, the remaining honey, and coconut oil together. Use your fingers to crumble the mixture until it forms a crumbly dough. If it becomes too soft, chill it in the fridge briefly. Spread the crumble over the rhubarb.

Bake the crumble: Bake in the preheated oven for 20 minutes. Keep an eye on it and cover with aluminum foil if it browns too quickly.

Serve immediately with Greek yogurt or vanilla ice cream. If you let it cool, the crumble will soften. For a crunchy top, reheat briefly in the oven.
