Okay, if your hand went up, serious kudos to you. This is something that if I\u2019m being honest, we struggle with over in our household. Work\u00a0<em>kinda<\/em> consumes like 90% of my life (the other 10% is split between Netflix and family and friends, ya know). However, whenever we are away from home, we really make an effort. In fact, we\u2019ve been\u00a0<em>three<\/em> times in two weeks which is a NEW record (including a vegan brunch!).<\/p>\n<p style=\"text-align: center;\">There are a ton of reasons why date night doesn\u2019t happen. But when it does, I always feel so much happier and lighter. So while I can\u2019t list\u00a0<em>all<\/em> the reasons date night can\u2019t happen, I can list one that it can: this\u00a0Date Night Burst Tomato, Mushroom and Garlic Creamy Pasta.<\/p>\n<p style=\"text-align: center;\">Okay, I\u00a0<em>kid<\/em> you not we timed this and it did NOT even take 30 minutes. I made it on the fly for an impromptu dinner and with one bite, Gavin was sold. He wanted me to tell him <em>exactly<\/em>\u00a0 how\u00a0<em>I<\/em> made it, because he kinda needed this in his life forever. Fast forward to now and it\u2019s my go to for a quick dinner\/impromptu date night. That\u2019s the magical thing about date night: you don\u2019t need to have it outside of the house. We usually throw a tablecloth over the table, put on some cute clothes, and sometimes even light a candle.<\/p>\n<p style=\"text-align: center;\" data-slot-rendered-dynamic=\"true\">Okay, the candle part was a joke, but\u00a0<em>really<\/em>, you could easily do that. It\u2019s all about making that night super special for the both of you. Cook pasta according to package directions to al dente. Add the garlic, tomatoes and shiitake mushrooms, stirring together. Cook for about 5-6 minutes, until the mushrooms are saut\u00e9ed down and the tomatoes are looking slightly wilted and ready to burst. Using your spatula or wooden spoon, gently press on each tomato to slightly burst it. Lower the heat to medium low and in the sea salt and the ground black pepper. Stir to combine.<\/div>\n<\/li>\n<li id=\"wprm-recipe-25788-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Stir in the cream cheese, vegan parmesan and \u00bc cup of the pasta water. Stir gently but swiftly to combine.<\/div>\n<\/li>\n<li id=\"wprm-recipe-25788-step-0-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Add in the pasta, then the rest of the reserved pasta water \u00bc cup of the time, stirring to combine and create a creamy sauce. The pasta will soak up most of the water, while thickening the sauce.<\/div>\n<\/li>\n<li id=\"wprm-recipe-25788-step-0-4\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Taste the sauce and add more sea salt or black pepper if desired.<\/div>\n<\/li>\n<li id=\"wprm-recipe-25788-step-0-5\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Turn off the heat, top with basil and drizzle the olive oil over.
