(Recipe) Dutch Escarole Mash – ‘Andijvie Stamppot’

In case you do not know … This Dutch cuisine called stamppot (translation: Mash Pot) consists of boiled potatoes, mashed and paired with one or several vegetables. Vegetable such as sauerkraut, kale, spinach, turnip, brussels sprouts or carrot and onion (a combi known as hutspot) are all possible.
My family favorite stamppot is “Andijvie Stamppot”, a leafy green otherwise known as endive. It is so easy and affordable to prepare. Ideally, stamppot dishes are usually served with rookworst, Dutch smoked sausage. Substitute it with whatever meat you like or not at all. Some say, sprinkle crispy bits of bacon are essential to jazz up the texture and blandness. Great tip! Don’t forget to formulate some savory gravy (Dutch: jus)
(Recipe) Dutch Escarole Mash
Time: 20 minutes
Serves 4 people
Dutch escarole mash with mashed potatoes, bacon and raw escarole. Exactly how grandma used to make this classic Dutch dish. Comfort food at its best.
Ingredients
- 400 gram fresh escarole
- 1,5 kg floury potatoes
- 200 ml milk
- 200 gram bacon lardons
- 4 tablespoons vinegar
- pepper and salt to taste
Instructions
- Peel and rinse the potatoes and chop them into pieces. The bigger the pieces are, the longer it takes to cook them. Add the potatoes to the medium-sized pan and fill the pan with water and season with salt.
- Boil the potatoes for 10 minutes, depending on their size. Meanwhile rinse the fresh escarole, dry it using the salad spinner and chop them into small pieces.
- Heat up the medium sized skillet and saute the bacon lardons without adding any extra oil or butter. The bacon needs to be a little crunchy.
- Drain the potatoes and mash them. You can use a potato masher or a fine sieve and a ladle to do this. The potatoes don’t need to be super smooth, but there shouldn’t be any big lumps left.
- Stir in the chopped raw escarole and bacon with its fat, add milk and vinegar, maybe you’ll need a bit more milk to create a smoother mash. Season with pepper and salt, enjoy your meal.
