Stir well, then pour in the canned tomatoes. Bring to a simmer and let the stew bubble gently for about 20 minutes.<\/p>\n<\/li>\n<li style=\"text-align: left;\" data-start=\"1801\" data-end=\"2018\">\n<p data-start=\"1804\" data-end=\"2018\"><strong data-start=\"1804\" data-end=\"1823\">Finish the stew<\/strong><br data-start=\"1823\" data-end=\"1826\" \/>Drain the chickpeas and slice the olives. When the vegetables are tender, stir in the chickpeas and olives. Let everything heat through for a few minutes. Season with salt and pepper to taste.<\/p>\n<\/li>\n<li style=\"text-align: left;\" data-start=\"2020\" data-end=\"2266\">\n<p data-start=\"2023\" data-end=\"2266\"><strong data-start=\"2023\" data-end=\"2052\">Make the cauliflower rice<\/strong><br data-start=\"2052\" data-end=\"2055\" \/>Pulse raw cauliflower in a food processor until it resembles rice. Saut\u00e9 in olive oil for 2\u20133 minutes with a pinch of salt, a sprinkle of paprika powder, and some mixed seeds or nuts if you like a bit of crunch.<\/p>\n<\/li>\n<li data-start=\"2268\" data-end=\"2455\">\n<p style=\"text-align: left;\" data-start=\"2271\" data-end=\"2455\"><strong data-start=\"2271\" data-end=\"2280\">Serve<\/strong><br data-start=\"2280\" data-end=\"2283\" \/>Tear the mozzarella into chunks and scatter over the warm stew just before serving.
